This makes Redclaw a unique Queensland dish! Description of Species as a Gourmet Product: Redclaw have a unique and succulent flavour and delicate texture. They are visually stunning and present fabulously on the plate which places them at the premium end of the seafood market. How is It Farmed Redclaw farming involves the managed cultivation of stock in earthen ponds. A natural healthy ecology (green water) must be nurtured by the farmer to provide the Redclaw with a healthy environment for them to thrive in. When was it domesticated Initial trials of Redclaw farming began in the late 1980’s by some pioneer farmers and DPI with most of the expansion taking place in the 90’s
