Aquaculture – Farmed and Fabulous Fresh Queensland Seafood

The Queensland aquaculture industry farms a wide range of native species in their regional setting.  Our farmers are committed to producing a gourmet eating experience produced in an environmentally sensitive manner. It is important that our consumers know our product, know how to cook it and serve it.

QAIF brought together leading food writers from around Australia to a taste of farmed seafood. Held at leading seafood restaurant Lure at the Coro. Leading chef Mark Maric trialled the menu of taste sensations including smoked Silver Perch, Murray Cod,  soft shell crab and of course, Barra and chips – but with thick wedges of potatoes and the lightest of tempura batter.  A special treat is the finale : a very mild Thai curry of all the seafood with the spice blend ground fresh for the dish.

Master Class

The Courier Mail - Hilton Master Class is a bi-annual event which brings leading chefs from around the world to conduct specialised cooking classes for the food industry and members of the public who join the classes,

Last year Dominique from leading Brisbane restaurant Mondo Organics prepared farmed Barramundi from GFB at Bowen and Pejo at Mourilyan as well as local Red Claw crayfish. 

Beautifully presented small tastes were sampled by many and enjoyed by all.
