Silver perch have become a popular table fish over recent years. Their eating qualities are of a high standard and their health benefits are becoming more broadly known. The fish is high in omega-3 oils, fourth in over 200 tested by the CSIRO. 

The fish is ideal for aquaculture. The sector is moving into a new level of production with technologies imported from the United States. The sector developed by supplying live perch to the Asian restaurants. This market is now saturated therefore new markets need to be developed. Preliminary market studies indicate good prospects for this product overseas. These export markets are large therefore collective marketing by growers is needed as well as larger production units.

Pond grown fish usually have a deeper body shape than  wild fish.
